首先,这个题本身就不是很好.
从语法上看,when做关联词的时候先行词必须是表时间的名词,也就是the days,这个成分在从句里面是做状语的.而which,在从句里面一般作为主语和宾语出现.in which的确可以代替when或者where,不过一般说话的时候,谁会这样生硬别扭呢?只能说when在这里更好一些,用起来更地道.
ls说的有问题,stay后面的in是为了beautiful country存在的,和in the days没关系……
关于更多的in which定语从句,可以参考下面一个问题.

stay 是不及物动词，后面已经跟介词in。when这里是引导时间定语，定前面的the day

其实这里的介词应该是on
